I've fallen a little behind on posting twice a week. It's not because I haven't been trying out new recipes or prepping Halloween costumes. It's mainly because I tend to forget to take pictures or my kids get to the goodies before I can take any decent photos. It's funny how my kids can hear the kitchen timer go off from upstairs when I'm baking goodies, but can't seem to hear me calling them to do their chores? Things that make you go...hmmm.
Lately, I've been trying to cut back on premade packaged items and make more things from scratch. I've been scouring Pinterest and the web for copycat recipes that I can make to replace the store stuff. This past week, I had the chance to make a wonderful recipe from Lynn's Kitchen Adventures, which she just calls homemade brownie mix. However, I think she should really change the name to The Incredible Magic Disappearing Copycat Betty Crocker Brownie. I know, it's a really long name, but it truly fits. For starters, it really does taste like those yummy store bought boxed brownie mixes. My youngest son couldn't believe that I made it from scratch, which made me feel somewhat insulted. Second, it will magically make your kids and husband show up in the kitchen. Third, it will disappear in the blink of any eye...seriously it's good.

This is a great recipe for a basic brownie. You can add chocolate chips, marshmallows, nuts, and whatever else you desire.

Lucky for me, I was able to take pictures of my second brownie batch and have something to post this week.
Seconds after this photo, one of these pieces disappeared into my youngest daughter's tummy. It was a collective effort by my kids to distract me while she went in for the kill. I'm thankful for this one photo :-)

- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2/3 cup unsweetened cocoa powder
- 1 3/4 cups white sugar (I will cut down to 1 1/2 cups next time I make this)
- 1/2 cup melted butter
- 1/2 cup oil
- 3 eggs
- 1 teaspoon vanilla
