A few days ago, I was looking for a weekend lunch recipe for the kids. I wanted to use up the turkey pepperoni we had in the frig, but I didn't feel like making pizza dough. Then, I remembered a recipe I found on the
Noble Pig Blog for Pepperoni Pizza Puffs. This recipe was just what I was looking for. Not only is this a quick and easy recipe, it's also kid approved.

This is what I initially whipped up. I added some Italian dried seasoning (1/8-1/4tsp) to the second batch and it definitely added some extra flavor to the the pizza puffs. |

This recipe makes a small batch and I had to double the recipe in order to fill all 24 cups of my mini muffin pan.

If your family is anything like mines, you may want to triple the recipe :-) BTW-My daughter added another pizza puff after I took this picture.

Pepperoni Pizza PuffsAdapted from Everyday
3/4 cup flour
3/4 teaspoon baking powder
3/4 cup whole milk
1 egg, lightly beaten
4 ounces mozzarella cheese, shredded (about 1 cup)
4 ounces pepperoni, cut into small cubes (about 1 cup)
1/2 cup pizza sauce
2 Tablespoons finely chopped fresh basil (optional)
Preheat oven to 375o. Grease a 24-cup mini muffin pan. In a large bowl, whisk together the flour and baking powder; whisk in the milk and egg. Stir in the mozzarella and pepperoni; let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
Serve with pizza sauce. You can add 1 tablespoon basil to the sauce and sprinkle the remaining on the pizza puffs. I did not use the fresh chopped basil, but opted to add 1/4tsp. of Italian seasoning to the mix before baking.
